Sitka Herring 2011. One Word… HUGE.

The Herring are coming.  It sounds like its going to be a great harvest.  Over the past few seasons, the catches have been more and more impressive.  The biggest concern now is the price.  In the past years, the prices have varied to as low at $400 a ton to $2000 a ton.  The value of the is hugely affected by the Japanese market.  Here’s a pic of the final product at the end of the post.
